This morning my one year old decided to wake me up and be fussy at 4:30 am. By the time he was settled down, I was wide awake and decided to try out a bread machine recipe for my family’s breakfast. I found one for Cinnamon Raisin bread that sounded good. I got started pulling out the ingredients and discovered that I didn’t have one of them (powdered milk) so quickly googled substitutions. It turns out you can use regular milk in place of the water that the recipe calls for. You are supposed to scald the milk to change its chemical properties but (ain’t nobody got time for that), I just warmed it in the mic for one minute and it worked just fine! Since there is nothing but a piece of crust left, I believe it was well enjoyed and thought I would share the recipe.
1 1/4 cup of water
3 cups bread flour
2 t butter
2 1/2 t powdered milk
3 t brown sugar
1 1/2 t salt
2 t cinnamon
2 1/2 t yeast
3/4 cup raisins
(As noted above I used warm milk in place of water, I also used 1 1/2 t cinnamon & 1/2 t cardamom as my family likes cardamom breads).
Add all ingredients in order except raisins.
Bake on sweet-bread setting or regular bread setting.
Add raisins at the ‘add in beep’ that your machine makes.
Check 10 minutes before timer runs out and remove if well browned already. You can do a ‘skewer test’ if you aren’t sure if it is done. Relish your morning bread with coffee or tea. Enjoy!
