Delicious (leftover) Easter Ham Recipe


I’m sure there are a few of you out there still digging out from under the Easter grass, Dishes, and … leftovers (like me).  So, I thought I’d share the easy recipe that I’m making for dinner tonight: Easter Monday Ham & Lentil Soup (I made that up). 😀 It’s in the Crock Pot right now- it smells delicious.


  • 2 cups lentils
  • 1 to 1 1/2 cups diced ham
  • 1 cup chopped onion
  • 1 bay leaf
  • 2 ribs celery, chopped
  • 1/2 cup diced carrots
  • 1 clove garlic, minced
  • seasoned salt and pepper, to taste


Combine all ingredients with 2 quarts water in the slow cooker. Cook on low, covered, 8 to 10 hours (if you don’t have 8-10 hours – you can cook it on high for 4 hours stirring every half-hour to 45 minutes). Taste and adjust seasonings and serve.

I used my Zyliss chopper for the first time – I got this for a wedding or shower gift, um… about 7 years ago (blush). I think I’m in love.
