Baking… my comfort hobby

The kids have been sick this week and sometimes there’s nothing to make you feel better than some comfort food.  That’s about the only excuse that i need!  Sometimes I wish I didn’t love baking quite so much. But, alas, I do. And, at least my family doesn’t complain.

Occasionally when I feel like baking, random creations begin swirling around my head (…sugarplums?) ;P

Last night I started day-dreaming of making Lemon Cookies and how I might change up my Ginger Cookie recipe to be a Lemon Cookie recipe. I think I’m ready for Spring!  My idea was to switch the Molasses with Corn Syrup, and instead of spices, add a couple T’s of Lemon extract.

So, as soon as babes went down for his afternoon nap, I broke out the mixer and gave it a try.  Here’s what the dough looked like with some sugar in the raw on top:

I will also mention that the only flour I had in my pantry was whole-wheat.  While it definitely reduces the guilt-factor, next time I think I’ll try 1/2 regular flour to get a lighter colored cookie. They taste delicious! My 5-year-old loved them – which was a little surprising to me (she’s got some discriminating tastes)!  They could use a little more leavening – so I’m thinking of ways to tweak them to turn out closer to the Lemon Cookies I’d imagined. But most importantly, we had fun baking and enjoyed a new recipe!

  1. i tried them again tonight- and my product tester husband was happy to eat them 😀 I used 2 eggs and only 1/2 cup of whole wheat flour and added a splash of vanilla. Definite improvements in color/texture – and the taste is still fabulous. 😀 I have some ideas i’m going to try next time – LOVE testing out ingredients and of course sampling the results 😛
